Crispy prawn chilli, or sambal udang is a classic Malaysian condiment, made from chilli, dried shrimp, shallots, and garlic. The spicy, salty, crunchy, umami-rich, garlicky flavours are addictive, and the condiment will transform any store-cupboard supper.
